The El Alisal Estate is situated at an elevation of 2000m in Quilanga, Loja and is owned by Leonidas Jarmillo and family. They represent a community of progressive producers who are shaping Ecuador’s growing reputation as a hotbed for experimental and forward-thinking coffee such as this new hybrid varietal, developed by careful breeding with Ethiopian heirlooms.

CREATIVE COFFEES FROM
PROGRESSIVE PRODUCERS.
Although this is a washed coffee, additional steps have been added to allow for optimal flavour development. These include a short aerobic fermentation in the cherry and a 96 hour anaerobic fermentation in the coffee’s mucilage before final washing and drying. These fermentation and drying steps lend the coffee a clean, fragrant and fruit-filled character.
Please note we only hold a limited stock of these products, but we aim to roast at least two times a week (T&Cs apply)
How to brew
We normally lean toward filter brewing for the producer series as the method highlights the more complex and delicate flavours in lighter roasted coffee. As always, we default to the industry standard of 60g of coffee per litre of water as a starting point.
Tasting notes
A beautifully sweet and silky coffee with an enticing floral bouquet and flavours of toffee and strawberry. The Sidra varietal really shines with this lighter roast with a hint of development, and with soft brews you can expect a sugary base, complex grape-like acidity and a satisfying, juicy finish.
